It’s all stored in metadata (EXIF) in the JPEG images you upload. The camera make and model (plus a fair amount of technical detail on the image capture itself) are a part of that.
While I’ll promise that I did know of EXIF beforehand, WikiPedia will inevitably tell you more about EXIF far better than I could ever blag.
It also offers a plethora of links relating to the manual reading and creation of EXIF data in your files, plus links for how to read the data from programming languages like PHP.
